Tangy Avocado Salad with Pineapple and Pomegranate

A zesty mouth watering salad is everyone's favorite at home. We often have a fight on who'll get a bigger portion!

Preparation Time: 15 minutes
Serves: 4

Ingredients

1.      2 ripe hass avocadoes cut into cubes
2.      3 Cucumbers with skin cut into cubes
3.      8-10 Cherry tomatoes sliced
4.      2 slices of tinned pineapple cut into cubes
5.      2 tbsp pomegranate seeds
6.      2 -3 roughly chopped ice burg lettuce or romaine lettuce
7.      A few coriander and mint leaves finely chopped

For the Dressing
1.      2 tbsp tinned pineapple syrup or fresh pineapple juice
2.      1 tbsp lemon juice
3.      1 tbsp vinegar
4.      4 tbsp olive oil
5.      ½ tsp cumin powder
6.      ½ tsp chat masala powder
7.      ¼ tsp freshly ground black pepper
Here We Go

1. Take a big mixing bowl, add all the ingredients for the salad.
2. Mix all the ingredients for the dressing in jar and shake it well to emulsify or whisk it to get a homogeneous mixture.
3. Pour the dressing over the salad and sprinkle salt to taste.
4. Gently combine all the ingredients and the dressing and serve.


Chef's Whisper
 1.  Pomegranate molasses can also be added to the dressing.

 2. Colorful bell peppers and shallots can be added instead of pineapple and pomegranate.
 
3.  The ratio of oil to liquid for a regular dressing would be 3:1 but you can always reduce the oil as per your taste and preference.

4.  You can add roasted cumin powder in the dressing to enhance the flavour.
