Ridge gourd peel Chutney

A delicious chutney that’ll surprise you with its luscious tangy taste. The best part about this versatile vegetable peel is that it prevents premature greying of hair. Give it a try and you’ll love it!

Serves: 6
Ingredients
1. 500g ridge gourd (also known as turai peel , washed and drained well
2. 1 inch ginger sliced
3. 4 garlic cloves
4. 2-3 dry red chillies
5. ¾ tsp. cumin seeds
6. A few curry leaves
7. 1 -2 tsp. tamarind paste
8. Salt to taste
9. 2-3 tbsp. oil
Here We Go
1. Take a kadai (deep non - stick pan) and add 1 tbsp. oil. Then, add ginger, garlic, dry red chilies, cumin seeds and curry leaves. Cook for some time, remove and keep aside.
2. In the same kadai, add the ridge gourd peel and cook for 10 minutes. Remove and keep aside
3. Put the ridge gourd, whole spices, tamarind paste, salt into a wet grinder and grind it to a fine paste.

1. If the chutney or pachadi is made with less oil, it can be stored in the refrigerator for up to 3-4 days and for a week if more oil is added.
2. Make sure you’re using only the soft part of the peel and discard the rough edges.
