Soothing Veg Porridge

Wow, this soothing vegetable porridge with a combination of rice, yellow moong dal (lentil) with a mild sweet flavor of coconut milk will keep you asking for more! Yellow lentil is low in fat and rich in protein, dietary fiber and coconut milk lowers the blood pressure and cholesterol.

Cooking Time: 20 minutes
Serves: 4

Ingredients
1.      ½ cup basmati or seeraga samba rice (known for its special aroma and taste)
2.      ¼ cup yellow moong dal (lentil)  washed and soaked
3.      1 big onion finely chopped or sliced
4.      3 tbsp. carrots cut into small cubes
5.      3 tbsp. beans chopped into small pieces
6.      2 tbsp. green peas
7.      3/4 tsp. garlic paste
8.      ½ tsp. ginger paste (optional)
9.      2 whole green chillies for flavour
10.   ¼ cup fresh or tinned coconut milk
11.   1-2 tbsp. freshly grated coconut
12.   ½ tsp. turmeric powder
13.   ¼ - ½ tsp. garam masala, preferably a homemade one
14.   A few coriander leaves finely chopped
15.   A few mint leaves finely chopped
16.   1-2 tbsp. olive oil
Here We Go

1.     Wash the rice 2-3 times and keep it in a sieve for the water to drain. Spread it on a kitchen towel or a newspaper and allow it to dry. Then, coarsely dry grind it and soak in 1 cup of drinking water.

2.     Take a cooking dish and add 1 tbsp. oil and sauté the carrots, beans and peas with a little salt for 2-3 minutes. Remove in a bowl and keep aside. Put the onions and sauté till transparent. Next, add garlic, ginger paste and cook for some time. Then, add the lentil, turmeric powder and mix well. Cook for 1-2 minutes. Add 3 cups of hot water, stir well and allow it to boil for 5-7 minutes.

3.     Now, add the soaked rice with water into the dish .Cook for 2 minutes and add the coconut milk and salt. Allow this to boil on medium low heat making sure your stir in regular intervals else it will burn at the bottom.

4.     Add more hot water if required as the porridge tends to become thick. Now, add the vegetables, green chillies and cook for 3-4 minutes. Once the rice and lentil is cooked, add garam masala, sprinkle coriander and mint leaves. Mix well and top it up with freshly grated coconut. Remove and serve hot.


Chef's Whisper
1.      The moong dal should be cooked well but not mashed up. A little bit of crunch feels good while eating.
2.      Minced chicken, chicken stock or vegetable stock can also be added (instead of water) to the porridge to enhance the taste.
3.      Make sure the vegetables are not over cooked.
