The Daily Saga 4 Soya Meat Patty Burger
Shifting can be sooo exciting .... you bet😆 No, I am just kidding! Lots of mixed feelings though.
One afternoon, I was trying to finish my reserves in the refrigerator and didn’t have meat to make burgers for my kids. So I decided to make a veggie burger and topped with Mango Chunda ( Gujarati sweet pickle or marmalade, shared by a friend )
Ingredients
1. 1 cup (50g) soya meat/chunks
2. ½ cup small to medium-sized beans, chopped
3. ½ cup small to medium-sized carrots, chopped
4. ¾ cup boiled and mashed potato (or you can use boiled potato cubes)
5. 1 onion, finely chopped
6. ½ tsp whole cumin seeds
7. ½ fennel seeds
8. 1 ½ tsp – 2 tsp garlic-ginger paste
9. ½ tsp red chili powder
10. ½ coriander powder
11. Finely chopped coriander leaves (optional)
12. 1 egg white, lightly beaten and seasoned with salt and pepper/or slurry with flour
13. Whole wheat/regular bread crumbs
14. Burger buns cut into halves
15. Iceberg lettuce washed and dried
16. Mayonnaise
17. Mango Chunda

Here We Go
1. Soak the soya chunks in hot water for 15 minutes.
2. Squeeze out the water and coarsely grind them in a mixer grinder or you can cut them into small pieces.
3. In a Kadai/cooking dish add oil cumin seeds, fennel seeds, and onion. Sauté till transparent.
4. Next, add garlic ginger paste and cook for 5 min. Add red chili and coriander powder. Put the carrots, beans, season with salt and sauté for some more time. Add soya meat and cook for 5 minutes.
5. Add salt if required and sprinkle coriander leaves. Remove and add potato. Mix well and shape them into burgers.
6. Dip each burger into egg/slurry, roll into bread crumbs and shallow fry till golden brown.
7. Remove on an absorbent paper.
8. Spread the mayo on the buns, stack lettuce, soya burger, mango chunda on the bottom bun and Cover it with the top bun.
9. Serve warm with a choice of salad.
Chef's Whisper
1. If you’re using boiled potato cubes then cook them with the veggies towards the end.
2. You can use cheese slices as well.
3. These burgers can also be used as patties and eaten as is.
4. If you want to avoid spices and add simple seasoning (salt, pepper, paprika, fresh or dried oregano)
